Banana & Coffee Oatmeal Cookies

- 1. Beat butter, white sugar and brown sugar until creamy. Add eggs one at a time. Add vanilla and mix well.
- 2. In separate bowl, combine flour, baking soda, salt and cinnamon. Stir into wet mixture. Stir in oats.
- 3. Cover and refrigerate for at least 2 hours up to overnight.
- 4. Preheat oven to 375 degrees. Grease cookie sheet. Roll dough into 1 inch balls and drop on cookie sheet 2 inches apart. Bake 8-10 minutes until golden brown. Cool before enjoying!
